Easy Weeknight Taco Bowl

For the Beef:

1 onion
2 large carrots
2 celery stalks
3 garlic cloves
1.5 lbs ground beef
2 tbsp All Purpose Seasoning Mix
1 tbsp Dijon mustard (or my fav, Kozlik’s Green Peppercorn Mustard)
sea salt + black pepper to taste

For the Bowl:

romaine leaves
avocado
kimchi
salsa
roasted sweet potato or corn chips

Sauté the onion, carrots, celery and garlic in a little olive oil. After a minute or two add in the ground beef, seasoning mix and mustard. Stir to combine and then allow to simmer, stirring occasionally until vegetables are tender and beef is cooked through. Have a taste and season with salt and pepper. Add beef and whatever extras you like (see suggestions above).
