Lemony Almond Cake

1 1/3 cups almond flour
½ teaspoon baking powder
pinch of sea salt
zest of 1 lemon
4 eggs
1/3 cup xylitol
3 Tablespoons olive oil
¼- ½ teaspoon almond extract (depending on preference)


Preheat oven to 325F
Combine almond flour, baking powder, sea salt and lemon zest. Set bowl aside. Whip eggs and xylitol until tripled in volume. You can cheat and use a powerful blender or go the old fashioned way and grab a whisk. Whisk in oil and almond extract.Fold egg mixture into dry ingredients. Pour batter into a cake pan lined with parchment paper and bake until cake springs back when touched. About 35-40 minutes.
