Sweet Potato and Beet Fries
Cut a sweet potato and a few beets into small wedges (the thinner you make ’em the faster you eat ’em!) No need to peel, just give them a good scrub.
Spread onto a baking sheet and drizzle with olive oil, sea salt and a bit of cinnamon. Mix around to coat. Throw into a 375F oven for about an hour. Keep an eye on them and turn over once or twice.
I’m pretty into the cinnamon lately especially with the hint of saltiness. You could use so many different spices though – a little rosemary and thyme or cumin or cayenne for some kick. I wonder what a grainy mustard/maple/balsamic dressing would be like? Next time…
